What is Canola Oil?

Canola was developed from rapeseed oil in the 1970s in Canada through cross-breeding to remove glucosinolates and erucic acid found in rapeseed, which can be toxic in high doses. Both canola and rapeseed belong to the cabbage/mustard family and have bright yellow flowers. In order to be considered and labeled as canola oil it must have less than 30 micromoles of glucosinolates and less than 2% of erucic acid.
